Chargrilled Sardines marinated with Garlic, Lemon and Thyme served with Courgette Chips

Purchase fresh cleaned Sardines from one of the Blue Island Fish Markets

Get all the ingredients ready: 

1. Marinate the sardines 

2. Cook the courgette chips 

3. Cook the sardines

4. Serve

Method for the Courgette chips:

Put the courgettes, olive oil, dill, salt and pepper in a container. Stir well and then flour them. Fry in hot oil until it gets golden brown.

Method for the Sardines:

Lay out the sardines on a baking tray and add the olive oil, garlic, thyme, lemon zest, lemon juice and salt. Then mix well and leave to marinate.

Grill over the charcoal for 3 to 4 minutes on each side.

Serve the sardines together with the courgette chips.
