Octopus Gyros

Visit a Blue Island fish market for your octopus.

Cook the octopus.

Prepare the spice mix.

Slice the octopus tentacles into thin strips.

Prepare the sauce.

Serve.

Execution Process: 

In a pot, combine the octopus, water, carrot, celery, and onion. Cook on medium heat for 45 minutes until the octopus is tender. Drain and let it cool. 

In a bowl, mix all the spices together thoroughly.

Then, place all sauce ingredients in a blender and blend until smooth. 

For the salad, combine all ingredients in a bowl and mix well. 

Slice the octopus into thin strips, sprinkle with 2 tbsp of the prepared spice mix, and mix well. Sear the octopus in a hot pan with a little olive oil for 2 minutes. 

Serve on Arabic pita bread, first spreading the sauce, then topping with salad, and finally the octopus. 

Wrap and serve.

1 Carrot, thinly sliced
1 medium Onion, halved
2 Celery Sticks, sliced

1 Green Apple, cut into sticks
2 Celery Sticks, finely chopped
2 tbsp fresh Cilantro
2 Radishes, cut into sticks
Juice from one Lime
0.5 tsp Bucovo (Crushed Red Pepper)
1 tbsp Olive Oil
