Grilled “butterfly” Prawns

Prepare all the ingredients:

1. Prepare the scented olive oil mixture

2. Grill the prawns

Method:

Mix the olive oil, garlic, chili flakes, and salt in a bowl until the salt is dissolved. Let the mixture sit for a while to infuse the oil with the flavors. Ideally, this can be done the day before. 

Next, wash the prawns and cut them in half lengthwise so that they open up like a butterfly. Cut the head in half with scissors and remove the intestine using a toothpick. For your convenience, you can ask Blue Island Fish Market to prepare the prawns for you. 

To prepare the grill, light up the charcoal and once ready, place the prawns on the grill with the open side up. Do not close the grill. Brush the prawns with the olive oil mixture and do not turn them on the other side. Grill for about 10-15 minutes until they change color, the flesh whitens and can be separated from the shell. At intervals, brush them with the scented olive oil mixture. 

Serve the grilled prawns with fresh lemon and additional scented olive oil for everyone to add as desired.
