Lemon Orzotto with Prawns
Visit a Blue Island Fish Market for cleaned Prawns
Prepare all ingredients:

Method:
To prepare the prawns, remove the heads and shells. Lightly score the backs with a knife and remove the intestines. If you prefer, you can leave 2-3 uncleaned for serving. Alternatively, you can have them cleaned at a Blue Island Fish Market for your convenience.
Next, add the olive oil and butter to a pan and place it over high heat. Once the butter melts, add the prawns and season them with half the amount of salt along with chili flakes. Once the prawns change color, turn them over and season with salt and pepper. Add garlic and remove the prawns along with the garlic once they change color.
For the orzotto, use the same pan and add olive oil. Sauté the onion and then add the orzo pasta while continuing to sauté. Pour in the wine and stir until the alcohol evaporates. Add the bouillon cube dissolved in water and boil for 10 minutes. Add the peas, lemon zest, lemon juice, parsley, salt and stir. Continue cooking until the orzo is tender (about 5-6 minutes), sprinkle with Parmesan and add the prawns. Mix and serve.
