Method:
To prepare the octopus, begin by placing it into a pot and boiling it until all the water it releases evaporates. This should take approximately 50 minutes. Once done, let the octopus cool and then cut it into smaller pieces.
Next, pour some olive oil into the same pot and sauté the onions until they are caramelized. This should take about 7-8 minutes. Add the octopus and stir well. Then, pour in the wine and let the alcohol evaporate. Add the tomato paste and stir it at the bottom of the pot to release its flavor. Add the cinnamon, bay leaves, cloves, and black pepper. Stir everything together, let it come to a boil, lower the heat and let simmer for 20 more minutes.
Add water to the pot and continue cooking for another 15 minutes. Then, add the vinegar and boil for another 5 minutes or until the sauce thickens.
While the octopus is cooking, boil 3 liters of water in a separate pot and add the bouillon cube and salt. Stir and add the ditalini to the pot. Boil for 7 minutes and then remove from heat. Strain and add it to the pot with the octopus. Stir everything together and serve.
