Sole Fillets with Pineapple and Red Pepper Salad
Purchase fresh sole fillets from a Blue Island Fish Market
Get all the ingredients ready:
1. Make the mayonnaise sauce
2. Prepare the salad
3. Cook the fish
4. Serve
Method:
Put the mayonnaise, cumin, paprika, turmeric, and some of the lime juice in a bowl and stir with a fork.
In another bowl, add all the salad ingredients and mix together.
Pour the coconut oil into a non-stick frying pan over a medium to high heat. Season the fish fillets with salt and pepper and cook for three minutes on each side. Pour some lime juice over them and cook for another two minutes, then remove from the pan.
Serve the fish with the salad and mayonnaise sauce.
This recipe can be made with Yellowfin tuna fillet or Salmon fillet.
