Lemon cod with fava beans
Visit a Blue Island Fish Market for your fresh cod fillets
Prepare all the ingredients:

2. Prepare the fish
3. Bake the fish
4. Serve
Method of Execution
Line a tray with non-stick baking paper and place the cod fillets. Add salt, pepper, olive oil, lemon juice and zest. Bake in a preheated oven at 180 °C for 8-10 minutes.
For the fava beans:
Soak the fava beans for about an hour and rinse. Fry the onion for 3-4 minutes, add salt, thyme or rosemary and the fava beans. Add the water and stir until it comes to a boil. Lower the heat, remove the aromatics and simmer for about 35 minutes.
Every now and then remove the dark foam that comes to the surface without stirring often. When cooked, puree and serve with a little olive oil, placing the cod fillets on top.
