Grilled Octopus Salad

Prepare all the ingredients:

1. Boil the octopus

2. Grill the octopus 

3. Prepare the salad

Method

Place the octopus into a pot. Cut the orange and lemon in half and add them to the pot along with the black pepper seeds, bay leaves, and water. Place the pot over high heat and once the water boils, cover it. Lower the heat and let it boil for around 40 minutes to an hour or until the octopus is tender. Let it cool. If desired, rub the octopus to remove its outer membrane. Rinse it, drain it, and coat it with a little olive oil. Place it on the grill and grill it over charcoal for 10 minutes on each side. Let it cool and cut it into small pieces.

Peel the orange and separate it into wedges. Remove the membranes and cut the wedges into pieces. Place the cabbage, coriander, and spring onions into a salad bowl. Add the orange and the octopus. For the dressing, mix the ingredients in a jar with a lid or a small blender until combined. Pour the dressing over the salad and serve.
