Healthy Fish and Chips with Cod and sweet potatoes
Visit a Blue Island Fish Market for your fresh cod fillets
Prepare all the ingredients:
1. Prepare the sweet potatoes
2. Bake the sweet potatoes
3. Bread the fish
4. Bake the fish
5. Serve
Method of execution:
Wash and cut the sweet potatoes into strips. Place into a bowl with a little olive oil, salt, pepper, turmeric and mix.
Next, line a baking tray with baking paper and spread the sweet potatoes.
Bake in a preheated oven at 200 °C for 20 minutes.
Prepare the marinade for the fish in a bowl. Add lemon zest and juice, 1 tbsp of milk and olive oil. Add the cod fillets and chill in the fridge for about 15-20 minutes.
Put a little flour in a bowl, a beaten egg in a second and the wholewheat breadcrumbs in a third with salt, pepper and a little paprika.
Then, pass the fillets one by one through all 3 bowls. First place in the flour, then dip into the beaten egg and finally coat with the breadcrumb mixture.
Place the fillets on a baking tray lined with baking paper and bake at 200 °C for 20 minutes.
Serve with the sweet potatoes
