Orzo with Prawns
Visit a Blue Island Fish Market for your cleaned Prawns
Prepare all the ingredients:
1. Fry the ingredients
2. Add the orzo and all the liquids
3. Cover for 15 minutes
4. Serve
Method of Execution:
Pour the olive oil into a pan on medium heat and in the meantime chop the prawns into small pieces. Sauté the onion for 2 to 3 minutes until softened, then add the zucchini and carrot and cook for another 3 minutes.
Carefully add the prawns with the sprig of rosemary and cook for a few minutes until they turn red. Remove the rosemary. Add the orzo and mix slightly for 2 minutes. Next add the grated tomatoes, salt, fresh pepper and mix carefully.
Finally, add the saffron and water or vegetable broth and cook over medium heat for about 15 minutes while adding more water if needed.
Serve with a few spoonfuls of grated dried anari cheese.
Tips: We can measure the broth that we will use in a 2 to 1 ratio with the orzo, as soon as it boils, we cover it by placing a towel and the lid of the pot and we remove it from the heat. We let stand for about 20 minutes to absorb its liquid and cook.
