Red Mullet fillets with Fava and a Fresh Salad

Method:
To prepare the fava, start by rinsing it in a colander and allowing it to drain. Heat olive oil in a saucepan over medium heat, then add the onion and sauté for 7-8 minutes until translucent but not brown. Add the fava and stir it in before pouring in the bouillon dissolved in water. Boil over high heat for about 5 minutes, then reduce the heat and use a slotted spoon to skim off any foam until it stops coming out. Stir in the carrot and cover the pot with a lid. Let it simmer for around 50 minutes or until the fava has absorbed all the broth and is tender. Remove from heat.
While the fava is cooking, make the fresh salad by mixing all the ingredients in a bowl.
For the red mullets, heat up some oil in a pan. Season the red mullet fillets with salt and pepper and coat them with flour, shaking off any excess. Fry them in the pan with the skin down and for 2 minutes on each side. Once done, remove the fillets from the pan and place them on absorbent paper to drain any excess oil.
To serve the dish, blend the fava with a hand blender until it has a velvety texture. Add salt and pepper and continue blending. Serve the fava on 4 plates and place 4-5 fillets of the fried red mullet, onion, thyme or oregano, cherry tomatoes, and drizzle with olive oil. Serve with the fresh salad.
