Red Mullet or Striped Mullet with Lemon-Caper Sauce

Execution Process:
Visit a Blue Island Fish Market for fresh cleaned red or striped mullets. Rinse the fish and pat them thoroughly dry with kitchen paper.
In a bowl, mix the flour, semolina, and paprika. Dredge the fish in the flour mixture and shake off any excess.
In a large pan, heat the olive oil and fry the fish over medium heat for 3–4 minutes on each side until crispy and golden. Remove and place on a paper towel-lined plate to keep warm.
Strain the oil and return it to the pan. Add the garlic and sauté briefly. Deglaze with the wine and allow the alcohol to evaporate. Add the stock, lemon zest, and lemon juice and simmer the sauce for 2–3 minutes.
Stir in the butter and capers and cook until the sauce thickens. Finally, add the chopped parsley, season with salt and pepper, and stir.
Arrange the fish on a serving platter and pour the lemon-caper sauce over the top.
