Seafood Orzotto with Turmeric
Visit a Blue Island Fish Market for cleaned and cut seafood
Prepare the ingredients:
1. Cook the seafood
2. Prepare the orzotto
3. Serve
Method:
Pour one tablespoon of olive oil into a covered pan and sauté the calamari and octopus until they release their liquids, about 7-10 minutes. Remove them to a plate and pour another tablespoon of olive oil into the pan. Add the onion and sauté until it is translucent. Add the turmeric and stir. Add the orzo pasta and continue stirring.
Return the calamari and octopus to the pan. Pour the ouzo or wine into the pan and let the alcohol evaporate. Dissolve the vegetable bouillon cube with water, add it to the pan and season with salt and pepper. Let the food simmer, lowering the heat to medium, and covering the pan until the orzotto comes to a boil, for about 10 minutes. Uncover and add the whole prawns, together with and mussels. Place the lid back on the pan and boil for 3-5 minutes or until the seafood is cooked and the orzo is tender. When it’s done, uncover the pan, sprinkle with parsley and serve.
