Sea bass with potatoes, tomato and herbs

Prepare the ingredients:

2. Prepare the potatoes

3. Bake the potatoes in the oven

4. Bake the Sea Bass

5. Serve

Method:

Place the sea bass onto a baking dish and pour the wine over it. Let it marinate for at least 30 minutes, turning it once to ensure it marinates evenly.

Next, peel and slice the potatoes and place them into a bowl. Slice the onions and tomatoes and add them to the bowl with the potatoes. Sprinkle with olive oil, salt, and pepper, mix well, and place them onto a baking tray. Pour 1/2 cup of water, and bake in a preheated oven at 180C° for 30 minutes. 

Mix 2 tablespoons of olive oil, lemon zest, orange zest, and bergamot zest in a small bowl.

Wipe the sea bass well using paper towels and sprinkle it with the scented olive oil on the outside, as well as inside its belly. Season with salt and pepper and place 1-2 sprigs of rosemary, thyme, and oregano into its belly. Place the sea bass on top of the half-baked potatoes. Add the remaining sprigs of herbs to the baking tray. Pour the remaining water and grill at 200C° for 40 minutes. 

Serve by pouring the juices from the baking tray over the fish.
