Trout with Orange Sauce and Mashed Potatoes

Execution Stages:

2. Marinate the fish.

3. Bake the potatoes and prepare the mash.

4. Bake the trout.

5. Prepare the sauce.

6. Serve.

Procedure:

Visit a Blue Island Fish Market for your cleaned fresh trout.

Place the trout in a non-stick baking tray and marinate with olive oil, salt, pepper, lemon zest, and orange zest. Place the lemon and orange slices inside the fish along with the thyme sprigs. Bake in a preheated oven at 180°C (356°F) for 30-35 minutes.

Meanwhile, boil the potatoes over medium heat for 30 minutes until tender. Drain and place them in a bowl. Add the coconut milk, vegetable butter, salt, and pepper. Mash until smooth.

For the sauce, combine orange juice and zest, white wine in a pan, and cook for 3-4 minutes. Add the honey and simmer until the sauce slightly thickens. Add the vegetable butter and stir until melted. Season with salt and pepper and add the parsley.

Serve the trout with the sauce and mashed potatoes.
