Octopus balls with Bulgur wheat
Visit a Blue Island Fish Market for the Octopus
Prepare all the ingredients:
1. Cook the Octopus
2. Cut the Octopus into small pieces
3. Mix all the ingredients
4. Shape the Octopus balls
5. Bake the Octopus balls
6. Cook the bulgur wheat
7. Serve
Method of Execution
Place the octopus in a pot together with the bay leaves, a little water and the balsamic vinegar. Cover the pot and simmer for 30 minutes to 1 hour depending on how tender we want our octopus.
Once certain that the octopus is well cooked, chop it finely after removing the bay leaf.
Pour the chopped octopus in a bowl and add the oats, mint, spring onion, basil, breadcrumbs, egg, lemon zest and juice, olive oil, salt and pepper. Mix with a spoon.
Shape the mixture into small round balls and place on a baking tray. Bake in the oven at 180-200 °C for about 20 minutes.
Serve with bulgur wheat cooked with fresh tomato and a fresh salad with cucumber, tomato and bell peppers
*Octopus balls can also be fried with a little olive oil or cooked on an iron griddle.
