Red Porgy Bites with Wild Rice and Vegetables
Execution Method
Heat the olive oil in a pot and sauté the onion for 3–4 minutes until softened. Add the wild rice, sea salt and pepper, stir, and cook for another 2 minutes.
Pour in the water and bring to a boil over high heat. Once it boils, add the peas, stir, cover the pot and remove it from the heat. Set aside.
For the fish bites, cut each Red Porgy fillet into 4 pieces. Place them in a bowl and season with the paprika, garlic powder, sea salt, pepper, and olive oil.
Place the eggs, panko and oats into three separate bowls. Coat each fish piece first in the oats, then in the egg, and finally in the panko.
Arrange the fish bites on a baking tray, drizzle lightly with olive oil, and bake in a preheated oven at 180°C for 10–12 minutes.
Serve the Red Porgy bites with the vegetables and the wild rice.
